The hardest part of this recipe is letting it marinate. Great for summer or winter this is a zesty salad that most people enjoy because the flavors aren’t too strong.
You can use this as a side for your homemade raw vegan nori rolls, I would even have it as a side dish with pasta – refreshing palate cleanser!!
1 large English cucumber
1 tablespoon nama shoyu or tamari
2.5 Tablespoons lemon juice
1 tablespoon grated ginger
1 teaspoon agave nectar or organic maple syrup
Sea salt to taste
Thinly sliced cucumber& toss in remainder of ingredients, allow to marinate for one hour or more.
